Dr. Jones is a neurologist who treated Adrian Pimento for supposed anterograde amnesia, which he calls Finding Dory disease.

In the Season 7 episode, Pimemento, Adrian Pimento was experiencing memory loss and extreme paranoia that someone was trying to kill him. Jake and Charles learn that Dr. Jones was the one prescribing Adrian Pimento pills that he had a reminder for and kept in his pocket. Dr. Jones informed them he was treating Adrian for anterograde amnesia and his paranoia was a side effect of the medicine he prescribed.
After getting shot Jake and Charles take Pimento's paranoia seriously and investigate.
Dr. Jones was the husband of a woman who hired Pimento as a private investigator. She believed he was cheating on her with a red headed spin instructor named Kendra, which he was. Thanks to Pimento's tattoos he was getting to remember important things, Jake and Charles discovered it was Dr. Jones who was trying to kill him and the drugs he was prescribing him were actually causing the amnesia.
